Carrots cooked in apple juice and honey are a tasty, sweet accompaniment to the chicken casserole. Of course, I used baby carrots in this recipe for my theme menu. The word does double duty in the title for this dish.

This is a take on balsamic chicken with a twist thrown in. The addition of crackers (Savoritz original style, or Ritz, or any similar brand is fine) soaks up the sauce and gives it an added texture and flavor punch. I’ve tried to give this measurements but to be honest I never measure, I just do what ‘feels right’. My husband has suggested we increase the sauce amount to serve over rice so that’s an option too if you feel experimental. Serve with cilantro lime rice or coleslaw. — posted by Amber M.

Our vegetable garden has been producing a lot of wonderful looking eggplant and we love to fix eggplant Parmesan with it. We tend to eat Keto and low-carb, so I modified some traditional recipes with some tasty twists to make it very cheesy, low-carb, easier to make, and a lot less greasy. I love the taste of fresh raspberries when they are in season. We try to eat Keto and lower-carb, so I took some traditional cheesecake techniques and made an easier version that is both tasty and lower-carb. I like to serve it with a raspberry sauce underneath it and no-sugar milk chocolate shavings on top of it. Makes for a very fancy looking desert. — posted by Tomaso Basso
